Assam Pedas Jade Perch with Kang Kong

  • 1 Australian jade perch*
  • 200g golden cherry tomatoes* (cut into wedges) 
  • 1 bunch kang kong* 
  • 1 piece tau kwa 
  • 5 tablespoons vegetable oil  
  • 1 tablespoon sugar   
  • 1 tablespoon fish curry powder      
  • ½ cup tamarind juice 
  • 1 cup water 

Spice Paste   

  • 1 clove garlic
  • 1 stalk lemongrass (white part only) 
  • 4 shallots 
  • 8 – 10 dried chillies 
  • ½ tablespoon belachan

Step 1

Gut the fish and cut into 4 parts depending on the size you want, add the golden cherry tomatoes, and set aside. Lightly pan sear the fish and tau kwa, and set aside.

Step 2

In a food processor, blend all the ingredients of the spice paste until fine. Add vegetable oil and stir fry the paste in a pan until fragrant, before adding tamarind juice and fish curry powder, and bring to a boil.

Step 3

Add the cherry tomatoes and kang kong, and bring to a boil before adding the fish, salt and sugar. Simmer for another 5 to 10 minutes, or until the fish is cooked.

Step 4

Serve hot with rice.
