Seabass Basil Curry

Ingredients: 

  • 4pc Barramundi Portions*
  • 0.5 cup Cooking Oil

Curry Paste

  • 1 bunch Basil Leaves*
  • 2 pc Lemongrass
  • 50g Galangal
  • 2 pc Kaffir Lime, zest
  • 2 pc Coriander Root
  • 3 pc Shallot
  • 3 pc Garlic Clove
  • 2 tsp Fish Sauce
  • 1 pc Chilli Padi

Finishing

  • 2 cup Coconut Milk
  • 5 cup Fish Stock
  • 3 tbsp Palm Sugar
  • 5 tbsp Fish Sauce

Garnish

  • 1pc Red Chilli
  • 2 sprig Basil Leaves*
  • 1 cup Beansprouts*

Step 1

In a blender, blend curry paste ingredients with a bit of water until it becomes a smooth paste.

Step 2

In a hot pan and some oil, sear the fish till it’s golden brown on each side. Reserve on the side.

Step 3

In the same pan with 2 tbsp of oil, fry the curry paste on high heat for 5 minutes.

Step 4

Add fish stock and coconut milk and reduce until thickened. Season with fish sauce.

Step 5

To finish, add beansprouts and seared fish and simmer for 3 - 4 minutes.

Step 6

Garnish with sliced red chillies and basil leaves.
