Spicy Pesto Shrimp Spaghetti
- 200g spaghetti
- 500g white shrimps* (deshelled leaving tail intact)
- 2 cloves garlic (peeled and minced)
- 1 bottle pesto sauce*
- ½ tablespoon paprika
- ½ tablespoon cayenne pepper
- Salt to season
- 6 tablespoons extra virgin olive oil
Mango Salsa Basil Salad
- 1 sweet ripe mango (diced)
- 100g cherry tomatoes* (sliced into halves)
- 1 packet mixed salad greens*
- 20g red ruby lettuce*
- 20g mini red radish* (sliced thinly)
- 50g sweet basil leaves*
Citrus Salad Dressing
- Juice of 2 lemons
- 4 tablespoons extra virgin olive oil
- Salt & pepper to season
To Serve and Garnish
- 20g microgreens – sweet basil*
- Sprinkle of grated parmesan
- Handful of roasted pine nuts
- Basil leaves* (chopped)
