Spicy Stir Fried Shrimps with Kale

In a pan, heat two tablespoons of the olive oil over high heat. Season shrimps with some salt and stir fry for 2 - 3 minutes. Do not overcook. Remove from pan and set aside.
In the same pan, add 1 tablespoon of oil, and lightly stir fry kale and onion. Cover with a lid and cook until the kale has wilted slightly for about 2 minutes.
Combine the oyster sauce, dark sauce, vinegar, fish sauce, chilli padi, and orange zest in a bowl. Then add the mixture into the pan until simmering.
Return the shrimps to the pan and toss well, cooking for 2 - 3 minutes until the sauce has thickened slightly. Serve hot.
