- 1 pkt Spinach Noodles*
- 1 cup Cooking Oil
- 1 pc Leek, sliced finely
- 2 tbsp Black Vinegar
- 2 pc Eggs*
- 1 cup Fresh Black Fungus*, sliced
- 1 cup Ice Plant*
- 1 cup Crispy Lettuce*, sliced finely
Cook eggs to a soft boil.
In a pot of hot oil, cook sliced leeks until browned. Reserve the leek oil to fry the noodles.
Blanch the noodles for 2 minutes in boiling water.
Strain the noodles into a hot pan of leek oil.
Fry the noodles together with the sliced black fungus.
In a bowl, serve the noodles topped with sliced lettuce and ice plant.
Crack a soft-boiled egg on top of the noodles.
