Spinach Stir-Fried Noodles with Locally-Grown Vegetables

  • 1 pkt Spinach Noodles*
  • 1 cup Cooking Oil
  • 1 pc Leek, sliced finely
  • 2 tbsp Black Vinegar


  • 2 pc Eggs*
  • 1 cup Fresh Black Fungus*, sliced
  • 1 cup Ice Plant*
  • 1 cup Crispy Lettuce*, sliced finely

Step 1

Cook eggs to a soft boil.

Step 2

In a pot of hot oil, cook sliced leeks until browned. Reserve the leek oil to fry the noodles.

Step 3

Blanch the noodles for 2 minutes in boiling water.

Step 4

Strain the noodles into a hot pan of leek oil.

Step 5

Fry the noodles together with the sliced black fungus.

Step 6

In a bowl, serve the noodles topped with sliced lettuce and ice plant.

Step 7

Crack a soft-boiled egg on top of the noodles.
